Yes, you can.you can use jumper wire to connect them together.GND--GND,VCC--VCC,NC--No connection,SIG--A0.

yes,you can do that! Sensor--Arduino, GND--GND, VCC--5V, NC--(NO CONNECTION), SIG--ANALOG 0(0 TO 5).
Please, could you clarify me what is the time unit in specification of sensors? For example, signal collecting period is S, what is the meaning?

You can make 1 battery from 3. You need to connect all batteries in parallel. But you need to equalize battery voltages before connect they in parallel. For example, you can use a three 2ohm resistors.
